Is there any way to create our own custom symbols for our waypoints?

Not in Reefmaster itself, but in the Insight Mapcreator. You can read all about this on Page 15 to 17 of the IMC PDF helpfile.

You need an icon editor.
You also can import photos. There is a sample in the RM forum, or here a pic.



And i can't understand Your Mapedit point problem. It is really simple to change the symbol name for receive new symbols in QGIS by using an exported RM point shape.
