How many RAM gigs should I get to run ReefMaster on a Apple machine in Bootcamp mode?

Planning to use Volume and Areas addon and NOT sidescan mosaic
32 gigs should be enough, right?

32 GB should be plenty, if you have it spare! Sidescan can use a lot of memory, as can large maps. I'd say anything over 8-16 GB would be plenty.
