At the moment that is kind of tricky. Your best bet is probably to set your overall shoreline to the required depth (e.g. 0), and then use "islands" as required to act as boundaries without providing depth (i.e. un-check the
Provides Depth setting, or else set to a different required depth). This sort of approach might work e.g. where you had a pier or jetty protruding into the water.

Issues are that the interpolation will still "see through" the boundary, if it is not providing depths, which may or may not give you the result that you are looking for.
