I am finally able to pull some live data from our project, but am running into two problems.... There is no time field when importing CSV, and no tide stations populate when importing as well. Am I missing something, or do I need to change my device to a different file format? Since we are trying to track changes over time, and we have a 6 foot tide swing, accuacy is fairly important to us.

You are correct in that we don't currently have a time field when importing CSV files. This is something of an oversight actually and we already planning to add it in the next maintenance release. Most users use raw sonar logs or NMEA, in which case time is imported, so if you have NMEA logs you could use these. The only other alternative at the moment is to pre-adjust your depths for tide before importing.
