When there is some wave, you can see them on the ESRI Grid.

Here is what I get:

is there a way to fix that ?

Looks to me fred as though you arent adjusting your tracks down to the same datum. This could be something as simple as having a different load in a small boat, or a higher or lower waterlevel than you are allowing for. The image you have is a classic example of depth adjustment errors. A bit of averaging would probably help you here.

it's really the wave which create that result. It's happen when I'm trolling for landlocked salmon, at about 5km/h, in wave of about 2-3 foot. My boat is only a small 19' fishing boat, and when there is wave of only 2-3 foot, at low speed, you really feel them... So it's produce the result we can see here...

I know that I need some averaging like you said, but how to do it ? I know that I can build something to do it in excel, importing CSV data, but it's not really user friendly... Kind of big work... I want to know if we can do that in an easier way. That's the real question. Don't forget that I have tons of data.

I agree with Trevor - it looks to me as if you have whole tracks that are offset. You can see continuous sections or raised and lowered depths, and this sort of effect is unlikely to occur as a result of wave action.
What smoothing have you set for your map generation? You could probably improve the appearance a little by increasing this value, but that is not the correct solution to the problem. For that you need to adjust each of your tracks to match the others - which is pain, I know.
