I'm going to receive an Eite 5-Ti Totalscan shortly bundled with C-MAP MAX-N+ for Mediterranean Sea. And I would like to preview which is a recommended workflow.

What I would understand: is the C-Map card enabled for sonar recording? If so, is it safe to save tracks, waypoints and sonar logs on that card?
Once the sonar logs are edited in RM can I put the newly created bathymetric map on the C-MAP memory card? Or is it better to back-up the original c-map (if is possible).

You can not put any random map from Genesis (or Reefmaster) on your C-Map card. You will be able to update it with maps from the Socialmap-part of Genesis though, and use that as overlay on the C-Map basemap.

But that process is much like Sonarcharts on Navionics. As in a paid subscription to update your mapchip.

So, If I've clearly understood:
once I made my own bathymetric map using ReefMaster I will be able to use it on my Elite5Ti only using a plain SD card, right?
